The good Adaptec cards as we know them from the SCSI-era were designed by a different type of engineers. It was a lot of bitching without a lot of content as to why. That means that things can go on without waiting for the drives to finish writing, but it also means that a power outage could leave you without all your data, because the cache might not be written out.
